Set to No if you want to show all product form sections by default. This will expand all of the fields and allow merchants to enter values easily. However, it will make the product forms to become quite long.

Set to Yes if you want to hide all product form panel except the required fields section. This will hide all other non required product forms. If you need to enter certain product fields, you will first to click the arrow down icon to expand the form, like example below:
